Spicy Pumpkin Soup

Satu hari tu aku pergi beli groceries, aku ternampak satu benda yang comel je rupa dia. Longgokan labu jepun, serius punyer comel, kecik2, hijau gelap. Aku tak bley belah, so ambik satu and pergi timbang, murah, baru RM2+. Bawak balik simpan dalam fridge and terus lupa….. Sampai lah 3 minggu lepas tu baru aku TERjumpa balik dengan labu cute tu… nasib kau lah labu, dah aku memang dasar pemalas…. Nasib baik masih edible lagi… aku pun potong macam wedges (tak kupas kulit pun… kan M..) dan panggang dalam oven, sebelum tu tabur ler garam and blackpepper and drizzle sikit olive oil…. Bila dah masak, about 30 minutes tu, aku makan….sedap… tapi kalau buat spicy pumpkin soup lagggiiii sedap….

Ingredients

  • 150 – 200 gm roasted japanese pumpkin
  • a clove of garlic
  • a knob of ginger
  • 2 cups of chicken stock
  • cream
  • salt and freshly crack blackpepper

Method :

  1. Easy peasy, saute chopped garlic and ginger, pour in the chicken stock, put in the roasted pumpkin, cook for another 15 minutes
  2. Transfer to your food processor and blitz smooth, warm in pot and pour in the cream (i used milk though) seasoned to taste
  3. Best eaten with hot garlic bread ~nyuummm….
