Dried Cranberry Butter Cake

Dah lama aku buat kek ni, baru hari ni aku berkesempatan nak upload (motif..? malas ka..?) Resipi aku cilok dari perempuan ni, tapi resipi asal dia guna quince (ntah spesis buah apakebondo eh, mana lak nak cari kat malaysia ni..?) so aku sudah mengsubsitute kan itu quince kepada dried cranberry. Sedap gak.. cuma agak crumbly sebab aku banyak menderhaka daripada resipi asal kan, di suruh letak susu aku memandai letak krim, letak caster sugar, aku memandai letak icing sugar pastu aku gi tambah pulak konon nak manis lagi aahh…, abis benda tu dah habis…tak koser aku nak pergi kedai..so nasib lah.. apa pun rasa nya memang sedap..(walau pun aku puji diri sendiri masak..haha)

Recipe for Dried Cranberry Butter Cake – adapted from this amazing woman here.

  • 250gm butter
  • 2 tsp baking powder
  • 150gm caster sugar
  • 125gm melted butter – cooled
  • 2 eggs – lightly beaten
  • 1 tsp vanilla essence
  • 100ml milk
  • 100gm dried cranberries

Baking method is very easy, sift flor and baking powder, mix in the sugar – set aside. After that mix all the wet ingredients in a small jar and dump everything in the dry ingredients. Mix well, transfer to a baking dish. I used an 8″x8″ square tin, lined with silicon paper. Bake for approx. 40 minutes at 170 cent (remember different oven have different temperement) so check regularly.
