I really love chicken rice but it’s hard to find good ones on sale. Either the amount of chicken is obscenely small or it tastes like chicken shit…pun intended… AND it is twice as hard to find good, HALAL hainanese chicken rice in JB. The ones that are sold unfornately is not up to my standard or just too expensive for me. So this is the result of my ever ferocious appetite and a combination of recipes that i’ve searched on the internet, i present to you ….. Hainanese Chicken Rice ala Julie..
How to make poached chicken ala Julie?
- Clean a chicken (preferably skinny one as easier to cook through), slice a big knob of ginger and spring onions, stuff into the chicken
- Bring to boil about a liter water, add about 1/2 cup of light soy sauce, 2TBsps oyster sauce, in other recipes they add in chinese wine or dry sherry but since it is obviously not halal, i didn’t put in
- When the water is boiling, put in the chicken, breast side up, leave for 15 minutes and put a plate that can fit in the pot to make sure the chicken is submerge in the broth. Make sure the water is barely rippling.
- After 15 minutes, turn off the stove and leave the chicken to further cook for 1.5 hours – 2 hours.
