Cheesecake simple

Dah lama aku tak update and i am getting sick looking at that kening picture of mine, macam mata chandramurkhi tau mata aku…. sangat menakutkan! So, walaupun aku sebenarnya tak de idea and tak berniat nak upload post ni (sebab gambar tak cun sangat…), terima lah….. cheesecake sempoi!


Aku dapat resipi cheesecake sempoi ni dari gf colleague aku, tak sangka pulak dia nak bagi sebab dia pergi kelas belajar buat kek ni, padahal aku main2 jek tanya, ‘oi, ko tanya bernie, dia ada resipi cheesecake tak? aku nak..’ muka tak malu kan aku, macam gengster pow gf orang punya resipi…hihi.. Malas nak taip sebiji sebentuk, aku taip ikut style aku buat ye…

Ingredients :

Base :

  • 100 gm butter – melt
  • 200 gm digestive biscuits – beat, pulverize anything that’s easy for you until it resembles fine breadcrumbs. Mix together with the melted butter and place in your springform pan and press the base. Place in the fridge and start making the filing.

Filling :

  • 500 gm creamcheese – room temp.
  • 200 gm caster sugar
  • 1 lemon – zest and take 1 tbsp of juice
  • 40 gm all purpose flour
  • 3 eggs
  • 200 gm whipping cream

Method :

  1. Cream cheesecake and sugar until fluffy, add in the lemon zest, juice and flour and mix well
  2. Separate 2 egg yolks + 1 egg, add in one at a time and mixing well, so it won’t curdle. Then add the cream and mix untill well combined.
  3. Whip the egg whites untill soft peak (when you lift the whisk, peak drops) and add into the above mixture untill well incorporated.
  4. Pour cheese mixture into the prepared biscuit base.
  5. Bake at 160C in a bain marie. (Bake at high for 15 mins (approx. 180C), then reduce to 160C for about 70-90 mins or untill cheesecake is blond in colour and set around the edges)

I leave the cake to cool inside the oven with the door ajar for about an hour and then place it in the fridge for a few hours before i cut it. Nyuumm~~~
