Post ni sepatut nya dah lama di publish tapi disebab kan aku ni pemalas dan gambar pulak tak edit lagi, baru hari ni boleh bercerita… Masa bulan pose hari tu tekak aku ni mengalah kan orang bunting macam-macam mengidam… salah satu dari nya ialah bingka beras ni ha… Aku seriusly tak pernah makan bingka beras tapi aku boleh rasa (feeling lah bukan rasa taste dengan lidah..) yang kuih ni mesti manis, lembut dan sedap je masuk kat tekak aku… and i was right!

KUIH BINGKA BERAS

Ingredients :

  • 150 gm rice flour
  • 180 gm castor sugar (less if you don’t like it sweet)
  • 300 gm thick coconut milk ( i used 1 200ml box – KARA brand and add water)
  • 450 ml water ( looks a lot but it’s not)
  • a pinch of salt

Method :

  1. Mix everything and strain so mixture is smooth free from lumps
  2. Pour mixture into a pot and cook on medium heat, stirring constantly until it cooks. You’ll know when it’s cook because the mixture will turn into a wet cement consistency (which is why you should never leave it and do something else because it burns easily..)
  3. Oil the baking pan, pour the wet cement and bake in hot oven 200C for 45 min – 1 hour
  4. When cooked (the top will be golden brown or dark brown), cool a good few hours before cutting it ~ nyuummmm!
